5 pies, Ø 16cm

Basic recipe
1500 g Short pastry, approx.
2500 g Bon Citron

Meringue
750 g Water  > Mix water and
90 g Ovasil    > Ovasil and whip up
900 g Sugar   > Add sugar step by step
450 g Sugar   > Stir in the end of whipping time

Method
Roll out the short pastry to 3 mm and place in a greased cake mould Ø 16cm.
Fill in Bon Citron, level off and bake.
Baking temperature: approx. 200 °C
Baking time: approx. 25 minutes
Allow the cake to cool down.
Spread the meringue onto the cake and brown it with a torch.
